Head pastry chef Kimberly Lin-McCartney said, “It took some
team ingenuity to get the structure into the hotel as many of the doors and
entrances are narrower than the tree. This tree’s a giant – it’s taking over
our entire kitchen.”
Ingredients needed include over 150 pounds of flour, 40
pounds of sugar, and 6 pounds of cinnamon.
In addition 180 egg yolks, 5 liters of milk, plus various measures of
baking powder, cloves, nutmeg, and cardamom.
“We are spicing the biscuits really heavily to make the
whole lobby smell deliciously Christmassy,” says Chef Kimberly.
The tree will be decorated with handmade baubles and edible
holly leaves sprinkled in shimmer powder.
Guests of the
Corinthia Hotel London will be able to enjoy “tasting” the special Christmas
tree from November 29, the day after Thanksgiving. The tree is part of the
hotel’s Christmas lobby treats for guests, which will also include
complimentary mini mince pies and mulled wine alongside chestnuts roasted in
the hotel’s Courtyard. The chestnuts have been foraged by our Executive Chef
Garry Hollihead from the Petworth Estate in West Sussex.
